Apricot Squares
 
1 c  Butter room temp.
1 c  Sugar
1    Egg yolk
2 c  All purpose flour
3/4 c  Finely chopped walnuts
1    Jars Apricot jam/10 oz
 
Preheat oven to 350~F. Cream butter with sugar in large bowl. Add egg yolk and mix well. Stir in flour. Add walnuts and blend well (dough will be soft) Divide dough in half. Spread half evenly into bottom of 9x13 baking dish. Cover with Apricot jam. Drop remaining dough by spoonfuls over jam spreading carefully to edges with knife. Bake until top is golden brown, about 45-60min. Let cool slightly before cutting into squares.
